Probe Thermometers
Professional thermometers for direct contact temperature measurement, with solutions for food, liquids, surfaces, industrial processes, laboratories, maintenance and quality control.
Penetration – internal temperature measurement in food and suitable materials
Immersion – measurement in liquids, oils, water and processes
Surface – contact measurement of surfaces and components
Food & HACCP – process, cooking, storage and distribution control
Industrial & Laboratory – technical measurements with different ranges and accuracy levels
Probe thermometers measure temperature directly at the point of interest through contact between the sensor and the product, liquid, material or surface.
Unlike infrared measurement, which mainly determines surface temperature, a penetration probe can measure the internal or core temperature of food and other suitable materials.
Available solutions include compact pocket thermometers, fixed probes, folding probes, water-resistant instruments and high-accuracy models, allowing the thermometer to be selected according to the application.
Measure Temperature Where It Really Matters
In many applications, knowing only the surface temperature is not enough. A probe allows measurement inside food, liquids, materials or directly at a specific point, providing information that is more representative of the actual condition of the product or process.
Main Types of Probe Measurement
01
Penetration Probes
Designed to be inserted into the product or material, allowing internal temperature to be measured. They are widely used for food, meat, refrigerated products, cooking, catering and quality control.
02
Immersion Probes
Used to measure temperature in liquids, water, oils, solutions and other compatible media. Probe construction, length and temperature range should be suitable for the application.
03
Surface Probes
Designed to measure temperature through direct contact with a surface, making them suitable for pipes, plates, components, machinery and technical processes.
04
Probes for Frozen and Semi-Solid Products
For harder, frozen or semi-solid products, a dedicated probe construction may be required to withstand the mechanical conditions of the measurement.
05
Pocket Thermometers
Compact instruments with integrated or folding probes, designed for fast measurements and mobile use in food, liquids and general applications.
Probe Thermometers for Food Applications
Temperature measurement is an important tool in food process control, from receiving raw materials through storage, preparation, cooking, display and distribution.
A penetration probe allows the internal temperature of food to be checked, helping assess whether the temperature conditions defined for the process are being met.
Temperature Measurement & HACCP
In HACCP systems, temperature can be an important parameter at different stages of the food process.
The instrument should be selected according to the application, measurement range, accuracy, response time, hygiene conditions and any verification or calibration requirements defined by the user's quality system.
Probe Thermometer Applications
Food Industry – production, processing and quality control
HACCP – temperature control at defined process points
Catering & Professional Kitchens – preparation, cooking, service and storage
Meat, Fish & Food Products – core temperature and process control
Cold Chain – receiving, storage and distribution
Sous-Vide – temperature verification in food processes
Water & Liquids – temperature measurement in different applications

How to Choose a Probe Thermometer
Temperature Range – determine the minimum and maximum values required
Accuracy – select according to the required tolerance
Probe Type – penetration, immersion, surface or special application
Probe Length – suitable for the depth and accessibility of the measurement point
Diameter & Tip – important for penetration and response time
Response Time – particularly important for fast checks
Protection – consider resistance to water, humidity and operating conditions
Functions – HOLD, MIN/MAX, alarms, memory or connectivity as required
Calibration – consider the traceability requirements of the application
The Right Probe Makes the Difference
Measurement performance does not depend only on the accuracy of the thermometer. The probe type, diameter, length, construction and response time must also be suitable for the product and measurement conditions.
Integrated Probe or Interchangeable Probes?
Thermometer with Integrated Probe
A compact, simple and ready-to-use solution, ideal when the same type of measurement is performed regularly.
Need Different Probe Types?
For applications that require switching between penetration, immersion, surface or other probe types, choose a thermometer designed for interchangeable probes.
Calibration & Traceability
In applications where temperature affects quality, safety or process compliance, periodic instrument verification should be considered.
Depending on the model and user requirements, calibration and certificate options may be available at defined temperature points. Contact EMI to evaluate the most suitable solution.
Probe Thermometer FAQ
What is a probe thermometer used for?
It is used for contact temperature measurement in food, liquids, materials, surfaces and different processes, depending on the probe type.
What is the difference between a penetration probe and an immersion probe?
A penetration probe is designed to be inserted into food or suitable materials. An immersion probe is primarily intended for measurement in liquids and compatible media.
Can I measure the internal temperature of food?
Yes. With a suitable penetration probe, the internal or core temperature of food can be measured.
Are all probe thermometers suitable for HACCP?
Not necessarily. The instrument should be selected according to the specific application requirements, including accuracy, range, hygiene, construction and applicable verification or calibration procedures.
What probe length should I choose?
The probe should be long enough to reach the required measurement point and, where applicable, keep the user at a suitable distance from the heat source.
Is a probe thermometer better than an infrared thermometer?
They use different technologies. Infrared thermometers are particularly useful for fast, non-contact surface measurements, while probe thermometers measure by contact and can measure internal temperature when a penetration probe is used.
Can a calibration certificate be supplied?
Calibration can be supplied or requested for many models, depending on the instrument, manufacturer and required temperature points.
