This device allows for accurate determination of the proportion of polar compounds (PC) directly in hot oil, ensuring healthier and better-tasting food, while complying with food safety standards.

Professional Application
Designed for use in professional kitchens, sanitary inspections, and food establishments, the PCE-FOT 10 performs direct measurements in hot oil, such as in deep fryers, without the need for external sampling. This enables fast, safe, and practical analysis at the point of use.

The PC value indicates the thermal and oxidative degradation level of the oil. According to recommendations by the German Society for Fat Science (DGF), oils with more than 24% polar compounds should be replaced, as they pose a health risk, compromise food taste, and can produce unpleasant odours and smoke during frying.
