The PC value indicates the thermal and oxidative degradation level of the oil. According to recommendations by the German Society for Fat Science (DGF), oils with more than 24% polar compounds should be replaced, as they pose a health risk, compromise food taste, and can produce unpleasant odours and smoke during frying.
